We have made Khao Soi many times, however, this one is a little different. We discovered a recipe from Chiang Mai University Library in Thailand and wanted to try it out. For example, we omit galangal in this curry but added a lot more ginger, fingerroot, and a bit of makrut citrus. Come try it out and let us know what you think!
